Olive extract, particularly hydroxytyrosol, has powerful antioxidant properties that prevent the oxidation of lipids and other food components, which helps maintain the quality and freshness of foods.

This extract has been shown to be effective against a wide range of bacteria and fungi, including pathogens such as E. coli, Salmonella, Staphylococcus aureus and Listeria monocytogenes. By inhibiting the growth of these microorganisms, the risk of spoilage and foodborne illness is reduced.
